August is here along with the heat. I can't believe how fast summer has flown by. Soon kids will be starting school!I adore summer with having kids at home….well they are in college.

Lemon Meringue Pie

Easy lemon meringue pie recipe perfect for summer! It's simple using ready-made crust and can be made the night before! It's light and refreshing.

Nothing says summer like a light, refreshing dessert. Homemade lemon meringue pie is just too much work for me. I love this easy method that I adapted from a Southern Living recipe in 2000 that was actually Key Lime and had a homemade crust!  This makes it simple and fast. 

This is my hubby's favorite dessert.  He'd rather have this than birthday cake!  I bet I could make him one anytime I wanted a “yes, dear” from him!  LOL!!!

He came home last week when I was making it for the blog and was so excited. We don't keep a lot of sweets in the house because I honestly have little to no restraint where sweets are involved. I told him I was making it for a neighbor. He was like….I'll take it to them. Ha, ha!

Believe it or not, I didn't have a piece of the pie. I started a new health plan that I'm seeing amazing results with so I didn't want to wreck that. BUT I did eat 2 small bites before giving Max a piece. I had to make sure it was ok. Gosh, I sure would have loved that entire slice, but I've been so good. I do have a cheat day on Saturdays.

Simply Delicious Lemon Meringue Pie

Yield: 1 pie
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

Simple and delicious lemon pie! A crowd pleaser!

Ingredients

  • 1 premade graham cracker pie crust
  • 2- 14 ounce cans sweetened condensed milk
  • 1 cup of fresh or bottled lemon juice
  • 4 egg whites
  • 1/2 teaspoon cream of tartar
  • 4 tablespoons sugar
  • garnish: lemon slices, optional

Instructions

For the pie

  1. Combine the condensed milk and lemon juice with a whisk to thoroughly combine.
  2. Pour into the pie crust. I always buy the larger crust that says for 2 extra servings!
  3. Set aside while you make the meringue.

For the meringue

  1. Beat egg whites only with the cream of tartar at high speed with an electric mixer just until foamy.
  2. Add sugar 1 tablespoon at a time, beating until soft peaks form and sugar dissolves (2-4 minutes).
  3. Spread the meringue over the filling.

Bake

  1. Bake at 325 degrees for approximately 25 minutes. Start checking a little earlier. The pie should be just lightly browned. Remove and chill for 8 hours to set.

Notes

Set your eggs on the counter about 10 minutes before ready to start. The whites will be fluffier if at room temperature.
Make things easier and make the night before! Keep refrigerated.

Mix your condensed milk and lemon juice together in a bowl. I like to use a whisk. Then pour it into your crust. Set aside while you prepare your meringue.

Meringue is pretty simple to make. 

  • I set my eggs on the counter to get to room temperature at least 10 minutes before cracking. They seem to fluff up easier for me when I do this step.
  • Separate the eggs. You just need the whites. Sometimes my daughter will use the yolks to make homemade ice cream so there is no waste.
  • Beat the eggs at a high speed with the cream of tartar. I really love my Kitchenaid Mixer that my husband gave me over 20 years ago as a gift. 
  • The eggs will get very foamy.
  • Add the sugar 1 tablespoon at a time. 
  • Your meringue will thicken and grow. 
  • Spread on the pie with a metal spatula

I like to use the extra 2 servings pre-made graham cracker pie crust for extra plus I like to add an extra fluffy meringue! This allows the room for that!

Keep and eye on it while baking.  Every oven is different.  You just want it lightly browned on top. Mine cooked just a tad too long. I swear I never hear that timer go off!! It's still great.

Chill for at least 8 hours or overnight to set up completely.

  5. Christy that pie looks scrum-diddly-umptious! Lemon flavored treats are just so perfect for summer. I am allergic to eggs, dairy and gluten and I don’t eat much sugar. However…recently I was able to add duck eggs into my diet which means I can start baking more again! I think I can adapt this recipe with a gluten free crust, coconut milk and coconut sugar!
