I am sharing a recipe for Semi-Homemade Spice Cake.

This cake starts with a box mix. It smells like fall as the spices are blended and it bakes in your oven.

A friend gave me this hand-written recipe years ago. It is fabulous for gift giving at Christmas because it freezes well. You can make them in advance and freeze without the icing. Thaw when ready to serve or give as a gift and add the icing.

 

Semi-Homemade Spice Cake
A wonderfully smelling spice cake made from a box cake mix. Freezes well without the icing for making in advance.

For the Cake
  1. 1 box of yellow cake mix your choice
  2. 1 cup orange juice
  3. 3/4 cup of oil
  4. 1/2 teaspoon ground cloves
  5. 1 teaspoon ground cinnamon
  6. 4 eggs beaten first
  7. 1/2 cup of sugar
  8. 1 Tablespoon of Instant Iced Tea with Lemon
  9. Baker's Joy
For the Frosting
  1. 2 Tablespoons of brown sugar
  2. 1 Tablespoon butter
  3. 2 Tablespoons milk
  4. 3/4 cup of 10x powdered sugar
For the Cake
  1. Preheat oven to 325 degrees
  2. Beat the eggs first in a bowl
  3. Add the remaining cake ingredients and mix together
  4. Pour into a Bundt pan sprayed with Baker's Joy or greased and floured.
  5. Bake in a 325 degree oven for approximately 1 hour give or take depending on your oven. Check at 50 minutes. Cake tester will come out clean.
  6. Let cool a few minutes in the pan then release from pan unto a cooling rack.
  7. Cool completely

For the Icing
  1. Melt 1 tablespoon of butter and 2 tablespoons of brown sugar in the microwave approx. 30-45 seconds.
  2. Add 2 tablespoons of milk and stir. Microwave about 2 minutes.
  3. Remove and stir in 3/4 cup of powdered sugar to form the icing.
  4. Immediately drizzle with a spoon over the cooled cake.
Notes
  1. A Bundt pan is used for this cake. You can divide into loaf pans for gift giving. The cake freezes well. Do not freeze with the icing.
  2. Smells wonderfully while baking. Makes a moist cake.

Even though baked in a Bundt pan, it is not dense like a pound cake. It is very light and moist.
