Cowboy Caviar {Appetizer}
Do you ever forget about a recipe when you haven't made it in a while…..like 10 years ago! I remember because it was for a special party.
We went to a Super Bowl Party this year, and I wanted to take something different. I went through my horribly disorganized recipe box….mental note to work on it! I came across this recipe handwritten on a piece of paper that I took over the phone from my sister-in-law. It is for Cowboy Caviar.
Why did I forget about it? Who knows, but it is back in the rotation! It was a big hit and guess what! It is so easy AND make ahead!
- 15 ounce can of black beans drained and rinsed well
- 4 ounce chopped, ripe olives drained
- 1/4 cup of diced onion
- 1 clove of garlic minced
- 2 tablespoons of olive oil
- 2 tablespoons of fresh lime juice
- 1/4 to 1/2 teaspoon of salt (depends on taste)
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon ground cumin
- 1/8 teaspoon of pepper
- 8 to12 ounce package of cream cheese
- 1 red bell pepper diced
- 1 bunch of green onion chopped
- large party sized bag of tortillas
- The day before combine the black beans and the next 9 ingredients in a bowl. Cover and refrigerate over night so the flavors blend together.
- To serve, spread the cream cheese over a medium sized platter or dish.
- Top with the bean mixture spreading to cover.
- Arrange the diced red bell pepper around the outer edge.
- Sprinkle the center with the desired amount of chopped green onion.
- Serve with tortilla chips
- I buy a 12 ounce container of the spreadable cream cheese like you use on a begal. It is easier to spread on the platter than the block, but both are fine.
- Don't expect leftovers!
This is definitely a favorite!
Just spread the cream cheese over the entire platter. This could easily be doubled with a larger platter.
Not only does it taste great, but it's a colorful presentation!

This is my kind of recipe. I use about the same for my cold pasta salads…… I am making this as soon as I can get the ingredients…. yummmm. In fact, I might just eat the whole thing myself. lol
