Homemade Banana Nut Bread

For many years the mother of a friend would bake us banana nut bread for Christmas. It was always such a treat. Warmed slightly it was wonderful with a cup of coffee for breakfast or with a cup of hot tea as an afternoon snack.

Some years a go she shared the recipe with me. I just recently came across it, and thought I'd share with you!

It is quite simple and wonderful for gift giving. It freezes well. That's such a time saver if you are making a large number for gift giving.

I made this easy No Sew Rooster Towel. It is such a wonderful way to give homemade baked goodies. A loaf of banana nut bread  is wrapped up in this basket ready to give away. My Monster Cookies would also be wonderful wrapped in this towel. They make a large batch and are perfect for gift giving.

The recipe makes 2 loaves. You could even do mini-loaves, but may need to experiment with the baking time.

I make 1 to enjoy now and I freeze one for another time. It's great to have on hand in the freezer. Take it out the night before to thaw and invite the girls over for coffee.

 

Homemade Banana Nut Bread
Minimal ingredients combined form this moist nut bread for you or gift giving

Ingredients
  1. 1/2 cup butter, softened
  2. 2 cups sugar
  3. 2eggs
  4. 2 cups of all purpose flour
  5. 1 tsp baking soda
  6. 1/2 cup buttermilk
  7. 1 tsp vanilla
  8. 3 large, ripe bananas
  9. 1 cup of chopped walnuts

Instructions
  1. Cream together the butter, sugar and eggs
  2. Add the flour and baking soda alternating each with electric mixer
  3. Then add the buttermilk, vanilla, bananas and nuts
  4. Spray 2 loaf pans with Bakers Joy or grease/flour
  5. Divide batter into the 2 pans equally
  6. Bake at 325 for 1 hour
  7. Remove from pans and let cool on wire racks
Notes
  1. This is a moist cake. It freezes well. Excellent with cream cheese lightly spread on the top of a slice.

 I did not have buttermilk on hand so what's a girl to do? I Googled buttermilk replacements. Guess what! It works. I poured 1/2 tablespoon of lemon juice into a bowl. Then I poured in 1/2 cup of milk. Stir and let sit for 5 minutes. I found this on Epicurious. Other substitutions are mentioned there, but this is the one I went with.

  2. I love banana bread! When I first started cooking it was the breads I chose to make and banana bread was my favorite. In fact I collect banana bread recipes. Thank you for sharing and when my freezer has cloned enough bananas I will make your recipes. ( I put one banana in the freezer and in a week it seems like I have four — don’t know how it happens.)

    1. I do the same thing with bananas. I use them in bread or my smoothies. What fun that you collect banana bread recipes! Happy baking!
