Pumpkin Chocolate Chip Muffins with Crumb Topping

Ingredients

Muffins

  • 4 Large eggs, room temperature
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 can pumpkin puree (15 ounces) (NOT pumpkin pie filling)
  • 1 cup canola oil
  • 1/2 cup applesauce
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 tsp salt kosher
  • 1 Bag semi-sweet chocolate chips (12 ounces)
  • 1 Bag walnut pieces (2 ounces or more)

Crumb Topping

  • 3 TBS granulated sugar
  • 1/3 cup brown sugar packed
  • 1 tsp ground cinamon
  • 1 pinch salt kosher
  • 3/4 cup all-purpose flour
  • 6 TBS unsalted butter melted

Instructions

Muffins

  • Preheat oven to 400 degrees.
  • In a large bowl, beat the eggs, sugars, pumpkin puree, oil and applesauce until smooth.
  • In a separate bowl whisk to combine flour, baking soda, baking powder, spices and salt.
  • Gradually add the dry mixture to the pumpkin mixture to blend well.
  • Fold in chocolate chips and walnuts if using.
  • Place 24 liners in muffin tins.
  • Equally fill each of the 24 muffin liners.
  • Top each muffin with the crumb topping.
  • Bake at 400 degrees for 15-18 minutes. A cake tester should come out clean when done. Mine took 18 minutes.
  • Cool in pan for 10 minutes.
  • Remove muffins to a cooling rack. Enjoy!
  • Once completely cool, store in a muffin keeper, cake dome or ziploc bag
  • They are yummy heated in the microwave!

Crumb Topping

  • In a medium bowl, combine the sugars, cinnamon, salt and flour. Use a small whisk or fork.
  • Add the melted butter. Stir with fork until combined and crumbly.
  • Add the crumb topping to the muffins before baking.

Notes

These are wonderful with a cup of coffee. While they are fabulous for a quick breakfast, they are yummy as a dessert. They work well for gift-giving and bake sales. Store in an airtight container. They are wonderful warmed in the microwave.
