Homemade Banana Nut Bread
For many years the mother of a friend would bake us banana nut bread for Christmas. It was always such a treat. Warmed slightly it was wonderful with a cup of coffee for breakfast or with a cup of hot tea as an afternoon snack.
Some years a go she shared the recipe with me. I just recently came across it, and thought I'd share with you!
It is quite simple and wonderful for gift giving. It freezes well. That's such a time saver if you are making a large number for gift giving.
Earlier this week, I shared my Back to School project.
I made this easy No Sew Rooster Towel. It is such a wonderful way to give homemade baked goodies. A loaf of banana nut bread is wrapped up in this basket ready to give away. My Monster Cookies would also be wonderful wrapped in this towel. They make a large batch and are perfect for gift giving.
The recipe makes 2 loaves. You could even do mini-loaves, but may need to experiment with the baking time.
I make 1 to enjoy now and I freeze one for another time. It's great to have on hand in the freezer. Take it out the night before to thaw and invite the girls over for coffee.
- 1/2 cup butter, softened
- 2 cups sugar
- 2eggs
- 2 cups of all purpose flour
- 1 tsp baking soda
- 1/2 cup buttermilk
- 1 tsp vanilla
- 3 large, ripe bananas
- 1 cup of chopped walnuts
- Cream together the butter, sugar and eggs
- Add the flour and baking soda alternating each with electric mixer
- Then add the buttermilk, vanilla, bananas and nuts
- Spray 2 loaf pans with Bakers Joy or grease/flour
- Divide batter into the 2 pans equally
- Bake at 325 for 1 hour
- Remove from pans and let cool on wire racks
- This is a moist cake. It freezes well. Excellent with cream cheese lightly spread on the top of a slice.

I love banana bread! When I first started cooking it was the breads I chose to make and banana bread was my favorite. In fact I collect banana bread recipes. Thank you for sharing and when my freezer has cloned enough bananas I will make your recipes. ( I put one banana in the freezer and in a week it seems like I have four — don’t know how it happens.)
