Fun fact…….as a kid, I absolutley loved peaches…..canned peaches! Ha, ha!

I must say that my food tastes have certainly evolved through the years to sliced fresh peaches with Peach Brie en Croûte.

It's only been in recent years that I've decided that I love brie. I used to not be a fan.

On its own, it a little meh for me, but pair it with a sweet or a savory, and it's devine.

We have it these days either baked or even room temperature.

We've been experimenting a lot with brie lately.

The absolute easiest way to serve it is room temperature smeared with a jam or chutney and sprinked with a nut of choice.

We decided to get a little fancy add another favorite, puff pastry. Perhaps it's a way of keeping France fresh in our minds from our trip last month.

Let's get to the recipe!

Peach Brie en Croûte

Gather your engredients.

  • 1 sheet of puff pastry
  • 8 ounce brie round
  • 1/3 cup of beach preserves or jam
  • 1 Tablespoon of sliced almonds
  • 1 egg white
  • 2 Tablespoons of water

You'll find the complete printable recipe below.

Let your sheet of puff pastry thaw.

Flour your surface, rolling pin and top of dough.

Roll the dough until your have about a 14 inch square. Doesn't have to be perfect!

Spread your jam in the center of the dough in the area where you will place your brie round. Sprinkle with the almonds.

There is no need to remove the waxy, paperlike seal from the brie. It is ediible.

Place it directly on top of the jam and almonds.

Then simply fold up the sides of the puff pastry to completely contain the interior contents.

This will be the bottom and not seen. After you have sealed it up, flip it over. Place it on a parchment-lined baking sheet.

Brush the top and sides with an egg wash. This will be 2 tablespoons of water with the egg white of one egg.

This will give your baked peach brie en croûte a bit of shine and color.

Brie is wonderful served with a number of items!

Serve Peach Brie en Croûthe with

  • torn pieces of soft French baguette
  • toasted baguette
  • crackers
  • sliced peaches
  • sliced apples

Bake at 400 degrees for about 20 minutes. The top will be a golden brown.

Let it sit 10-20 minutes before serving. The longer you let it sit, the less melted it will be.

If you do not finish your brie, that's ok! Place it in a small shallow dish in the fridge. Wrap it in foil and reheat at about 350 for 15 minutes.
