The Best Hearty Tailgate Chili Recipe

This is the best hearty tailgate chili recipe that your family and friends will love. The initial chopping of fresh ingredients and browning of meats can be prepped a day ahead which makes this a dump-and-go recipe the day of your meal. I have even prepped the spices in a bowl in advance.

We used to have season football tickets to all the Clemson University games. We let them go years ago when the kids were very involved in Saturday sports.

Now we enjoy this on cold fall and winter days and big games like the Super Bowl!

Ingredients you'll need

To get started making this recipe, you'll first want to gather all your ingredients first. Don't be intimidated by the lengthy list of ingredients. Only 5 ingredients need chopping!

Here is what you'll need!

  • 1 pound ground beef chuck
  • 1 pound Italian sausage, mild
  • 2 15-ounce cans of mild chili beans, drained
  • 1 15-ounce can of medium chili beans, drained
  • 1 28-ounce can of diced tomatoes with juice
  • 1 14.5-ounce can of diced tomatoes with juice
  • 1 6-ounce can of tomato paste
  • 1 large sweet onion chopped
  • 2 stalks of celery chopped
  • 1 green bell pepper seeded and chopped
  • 1 red bell pepper seeded and chopped
  • 1 poblano pepper seeded and chopped
  • 2 tablespoon bacon bits
  • 3 cubes beef bouillon
  • 1 12-ounce bottle of beer
  • 3 Tablespoons chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1 teaspoon hot pepper sauce like Cholula
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon white sugar

Supplies Used

Feel free to add more chili powder if you want extra spicey!

Step by Step Instructions

Step 1: Brown your meats on the stove or in the Instant Pot. Drain any fat when finished.

Step 2: Prep all of the fresh veggies by chopping according to the ingredients list. You may opt to saute the fresh veggies in a couple of tablespoons of oil. I tossed mine in fresh with the spices for a crispier feel.

Step 3: Add all remaining ingredients to the pot of meat.

Step 3: Allow the chili to simmer on the stovetop for at least 2 hours. Longer is ok, add extra water if necessary. Before serving taste and add more salt, pepper, and chili powder if necessary.

You can also make this the day before and reheat before serving.

Slow Cooker

I have made this in the slow cooker as well. Just brown your meats and fresh veggies if desired first on the stove. Then add all ingredients to the slow cooker. Low and slow is best for chili. Cover and cook on low for 5-6 hours. This is my favorite method.

Instant Pot

You can do everything in this one pot. Brown your meats and veggies (if doing so). Then add the remainder of the ingredients. Cook on high pressure for 16 minutes. Allow to naturally release pressure when done cooking. You will most likely get a burn notice on the Instant Pot. Tomatoes can tend to burn. I have had the burn notice come up, but have not had an issue with burning. I researched this, and since tomatoes can burn with pressure cooking, you can layer the canned tomatoes to the top of the chili and let it naturally mix as it cooks. Then give it all a good stir at the end. I even like to leave on the keep warm feature.

Tailgate Chili

Ingredients
  

  • 1 pound ground beef chuck
  • 1 pound Italian sausage, mild
  • 2 15-ounce cans mild chili beans, drained
  • 1 15-ounce can of medium chili beans, drained
  • 1 28 ounce can diced tomatoes with juice
  • 1 14.5-ounce can of diced tomatoes with juice
  • 1 6 ounce can tomato paste
  • 1 large sweet onion chopped
  • 2 stalks celery chopped
  • 1 green bell pepper seeded and chopped
  • 1 red bell pepper seeded and chopped
  • 1 poblano pepper seeded and chopped
  • 2 tablespoon bacon bits
  • 3 cubes beef bouillon
  • 1 12 ounce bottle of beer
  • 3 Tablespoon chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic

Instructions
 

  • Heat a large stockpot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
  • You can saute the onion and peppers first. I just toss it in with all the other ingredients. We like it to have a bit more crunch with the fresh veggies.
  • Add remaining ingredients to your pot. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
  • After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
  • To serve, ladle into bowls, and top with suggested condiments.

Notes

Condiment Suggestions: corn chips such as Fritos®, shredded cheese, sour cream, sliced avocado, green onions, tortilla chips, and cornbread.
Slow Cooker: After cooking meat on the stovetop, you can transfer and cook in a slow cooker on low for 5-6 hours! I do this a lot.
Instant Pot: I do this a lot now!!! Cook meat on the saute setting. Then add everything and cook on high pressure for about 16 minutes! NOTE: You may receive a burn notice on your instant pot. I've just been ignoring that. It hasn't burned for me. In my research, it does appear that tomatoes are what cause the burn notice. You can pour all the tomatoes on top and not stir to mix. It will blend as it cooks.
