Ashlyn is back with another great recipe that she created. She loves to play in the kitchen. Like me, we love to just throw things together to see what happens.
This was a big win….just like last month's Curry Beef and Garden Skillet.
You'll find the printable recipe card at the end of the post. I'll be sharing the process photos and a condensed version of the how-to that you can refer to if you have printable questions.
Be sure to let your panini press heat up while you prep and cook.
It's ok if you don't have a panini press! You can cook this in a skillet just like a traditional grilled cheese or pop it in the oven under the broiler.
This is a thicker grilled cheese so it's much easier to cook in the panini press so you don't lose filling while you flip.
Look at all those beautiful freshly chopped veggies!
Quick Tip: Use the precooked bacon in the box that you just have to microwave for this. You can certainly fry up a batch of bacon, but this is quicker and less messy.
Ashlyn decided to give this a try the time before we made these grilled cheeses. Instead of microwaving the bacon, she heated it up in the same pan while the veggies simmered. She's one smart cookie!
Butter one side of all 4 slices of bread for 2 sandwiches. The buttered side is what will be grilled on the panini. Flip the buttered bread over on the cutting board.
Lay one slice of cheese on the bottoms of your sandwich.
Now, divide the veggies between the 2 bottom slices.
Top each mound of veggies with another slice of cheese. Adding this extra thin slice of cheese will make the cheese stick to the bread and veggies keeping the sandwich intact.
The panini lid was closed before a photo was taken. We quickly opened it up. That's why you see the untoasted groove lines. Cook per the recipe instructions.
Seeing this golden goodness, makes me want one right now! Slice them in half and serve.
This gourmet grilled cheese is satisfying on its own with a little fruit as well as with salads and soups!
Gourmet Grilled Cheese
This gourmet grilled cheese is so flavorful with onions and peppers! You can make this with a panini press, in a skillet, or under a broiler.
Ingredients
- 1 TBS olive oil
- 4 slices of Bacon or precooked bacon
- 4 slices of sourdough bread
- 1 red bell pepper
- 1 medium sweet onion
- 4oz. block of pepper jack cheese
- 1 poblano pepper- ribs and seeds removed
- salt and pepper to taste
- 3/4 cup sliced mushrooms
- 1 clove garlic
- butter
Instructions
- Preheat panini press to 375 degrees
- Slice all vegetables
- Heat oil in the pan on medium heat
- Add garlic then sauté for 30 seconds or until fragrant
- Add onion and peppers
- Sauté stirring frequently for 3-4 minutes
- Add mushrooms and saute until tender
- If using precooked bacon add now (arrange around the sides of the pan- see photos)
- While vegetables cook, spread butter on one side of each slice of bread
- Thinly slice cheese (thinner slices melt more evenly)
- Add a layer of cheese to one slice of bread (unbuttered side), then evenly distribute the veggies between the two bottom slices.
- Then add two slices of bacon to each
- Add another thin layer of cheese
- Top sandwich with your other slice of buttered bread
- Place on the panini press (buttered side down) and cook for 10 minutes or until golden brown and cheese is melted
Notes
I use a mandolin to slice veggies and cheese! If you do not have a panini press, cook on the stovetop in a pan like traditional grilled cheese. You can also place these on a broiler, flipping 1/2 way through.
