What is Classic Pound Cake?

A pound cake is much denser than a traditional layer cake. It has more fat than a regular cake. Just because a pound cake is more dense does not mean that you have to sacrifice moistness or flavor.

I have been making this pound cake for over 25 years. Back before having children, I was a school teacher. I had a sweet lady who cleaned the house 1x per week while I was working. Every Christmas, she would bake her clients a wonderful pound cake. I asked for the recipe one year, and she gladly shared it. I still have the sheet of paper with it carefully written. 

I have given this as a gift over the years. It is such a crowd-pleaser and freezes well.

You can enjoy it plain or top with chocolate or caramel sauces. It makes a beautiful presentation served with homemade whipped cream and strawberries.

What brand is best for Flour?

Since I started making homemade sourdough bread again, I've only used King Arthur flour. I prefer to buy organic, but the regular unbleached all-purpose flour is a high-quality flour. If you have a Costco membership you can find both organic and non-organic at a better price. It is especially beneficial if you bake a lot over the holidays. Since I have not been buying bread and making our own, I easily use up the large container from Costco.

Pound cake freezes well for up to 3 months. I wrap it in heavy duty foil and then place in large ziploc bags. This is helpful for when making batches for gifts. For example, we enjoyed 1/2 of one at Thanksgiving. I froze the leftovers and we finished it off last weekend.

How to Make Classic Pound Cake

Sift your flour, salt, and baking powder together and set aside.

Using your mixer, cream together well the sugar and Crisco.

Add eggs beating well.

Alternate adding the sifted flour mixture and whole milk. Blend this on 2 speed well.

Blend in vanilla and lemon.

The batter will have a much stiffer consistency than a traditional cake.

Spray a tube pan with baking spray, which is a mixture of oil and flour. This is such an easy step! You can also butter and flour the pan the old-school way.

Pour into the tube pan using your silicone spatula.

Bake in a preheated oven at 325 degrees for 1-1/2 hours. The cake tester will come out clean.

Cool on a trivet for about 10 minutes then release to a wire rack to complete cooling.

While you do add lemon extract, it is a slight hint of lemon. It is barely noticeable.

I like to have it for breakfast with a cup of coffee or hot tea.

Ingredients
  

  • 3 cups All-Purpose Flour
  • 3 cups granulated sugar
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1-1/2 cups Crisco 1-1/2 sticks is the easiest

  • 1-1/4 cups whole milk do not substitue redulced or low fat
  • 1 tsp vanilla extract do not use imitation
  • 1 tsp lemon flavoring
  • Baking Spray
